Great movie...

Last night I went to see the new SATC movie! The girls and I had planned to get all dressed up and go on opening night, but that just didn't work out. So we ended up going on Sunday night. I was dressed to the nines in my shiny, silver, chic dress, diamond horseshoe necklace, and my Manolo Blahnik knockoffs!



I walked outside to meet Phylis and Christine to find that they didn't dress up! Shorts and Capris were not discussed! Tell me I didn't feel like Bridget Jones at that moment! Luckily we live right next to each other so I guilted them into changing and they looked fabulous! Now I'm thinking we should have taken pictures.

I guess it was good that we went last night because it wasn't very crowded and we landed the best seats in the theater. The movie was great! Of course, we were all die hard fans of the show and it was so good to see our SATC crew in action again and still trying to answer the burning question, "Are love and happiness possible?"

Great recipe...

Ok, and now for the great recipe! I found a recipe in the Cooking Light magazine for low calorie crab cakes.
I tried it out and they are amazing!




1 can of premium lump crab meat - shell pieces removed (don't get "chicken of the sea" or "bumble bee" brands - opt for the expensive kind - trust me it's worth it!)

1/2 cup crushed wheat crackers (about 12 crackers) - you can cut this out or reduce the amount for low carb recipes

1/3 cup finely chopped green bell pepper

1/3 cup finely chopped red bell pepper

1/4 cup of light mayonnaise

1 tablespoon chpped fresh parsley ( I opted for fresh cilantro instead which added a nice flavor)

1 teaspoon of garlic powder

1 teaspoon of prepared mustard

2 teaspoons of Worcestershire sauce

1/4 teaspoon Hungarian hot paprika

1/8 teaspoon of freshly ground black pepper

3 large egg whites

Cooking spray

4 lemon wedges

1- Preheat broiler
2- Combine first 12 ingredients in a medium sized bowl. Divide mixture into 4 equal portions, shaping each into a 1-inch thick patty. Place patties on a baking sheet coated with cooking spray. Broil 3 inches from the heat for 10 minutes or until browned (make sure you watch it so it doesn't burn - ovens vary!)

Then I baked the patties on 350 degrees for 5 minutes more. - The recipe didn't call for that but I found broiling them didn't cook them fully. Another option is to try baking them for 10 minutes on 350 degrees and then pop them on the barbecue for a few minutes on each side! - make sure to spray some non-stick spray on the grill so they don't stick! You might even want to try putting some foil over the grill and spraying that with non-stick spray.

Calories 280 (32% from fat); FAT 10.3g (sat 1.7g); PROTEIN 25.2g; CARB 21.9g (if you use 12 wheat crackers - you can remove or reduce the number of crackers to lower the carbs in the recipe); FIBER 3.4g; CHOL 72mg; IRON 1.6mg; SODIUM 699mg (reduce sodium by rinsing off the crabmeat before adding it to your recipe and by eliminating or reducing the wheat crackers from your recipe); CALC 75mg

Sorry to those of you who use the metrics system - I was never really good with that :) I will have to find a weight converter!

Nicole that recipe looks fabulous. I think you should make it and invite your favorite neighbors over for some dinner!!!
